  • 3.4 oz package of pistachio pudding mix
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs, at room temperature
  • 1/2 cup chopped pistachios (plus more for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Cream together the softened butter and granulated sugar in a large bowl until fluffy (3-4 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in the pistachio pudding mix.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined.
  5. Fold in half of the chopped pistachios and pour batter into the prepared pan. Sprinkle remaining pistachios on top.
