- 1/2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix rolled oats, protein powder, baking powder, and cinnamon until combined.
- In another bowl, whisk together Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry mixture using a spatula. Avoid overmixing to keep muffins light.
- Carefully fold in the blueberries until evenly distributed.
- Spoon batter into muffin cups, filling them three-quarters full. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
