  • 1 scoop (30g) vanilla protein powder
  • 1 cup fresh blueberries (or frozen)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 tsp baking powder
  • 2 large eggs
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix rolled oats, protein powder, baking powder, and cinnamon until combined.
  3. In another bowl, whisk together Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry mixture using a spatula. Avoid overmixing to keep muffins light.
  5. Carefully fold in the blueberries until evenly distributed.
  6. Spoon batter into muffin cups, filling them three-quarters full. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
