  • 1 package (17.3 oz) puff pastry sheets, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 egg (for egg wash)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  3. In a bowl, mix the sautéed spinach with ricotta, Parmesan, salt, and pepper until well combined.
  4. Roll out the puff pastry on a floured surface to about 1/8 inch thick. Cut into squares or circles.
  5. Place a spoonful of filling onto one side of each pastry piece, fold over, and seal edges with a fork.
  6. Brush each pastry with beaten egg for shine. Bake for 20-25 minutes or until golden brown.
