  • 1 whole chicken (45 pounds)
  • 2 tbsp Dijon mustard
  • 1 small head green or purple cabbage, cut into wedges
  • 4 tbsp extra virgin olive oil, divided
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme leaves
  • 2 tsp fresh rosemary, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Pat the chicken dry with paper towels and place it on the baking sheet. Rub it all over with 2 tablespoons of olive oil.
  3. Generously season the chicken with salt, pepper, minced garlic, thyme, and rosemary.
  4. In a small bowl, mix Dijon mustard and lemon juice; coat the chicken evenly with this mixture.
  5. Arrange cabbage wedges around the chicken on the baking sheet. Drizzle remaining olive oil over the cabbage and season with salt and pepper.
