- 12 large pasta shells
- 1 lb raw shrimp, peeled and deveined
- 3 cloves garlic, minced
- 8 oz cream cheese, softened
- 1 cup grated Parmesan cheese
- ¼ cup fresh parsley, chopped
- 2 tbsp lemon juice
- 4 tbsp unsalted butter
- ½ tsp red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the pasta shells in salted boiling water until al dente; drain and set aside to cool.
- In a skillet over medium heat, melt the butter and sauté the minced garlic until fragrant. Add the shrimp and cook until pink and opaque.
- In a mixing bowl, combine chopped shrimp, cream cheese, half of the Parmesan, parsley, lemon juice, red pepper flakes, salt, and pepper; mix until creamy.
- Fill each pasta shell with the shrimp mixture and place in a greased baking dish.
- Top with remaining Parmesan cheese and bake for 20-25 minutes until bubbly.
- Let cool slightly before serving; garnish with extra parsley if desired.
