  • 34 boneless, skinless chicken breasts
  • 2 tsp Cajun seasoning
  • 1 cup heavy cream
  • 8 oz fettuccine or penne pasta
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the chicken until golden brown on both sides (about 5 minutes per side).
  2. Add minced garlic and Cajun seasoning in the last minute of searing.
  3. Transfer the chicken to a slow cooker and pour in chicken broth.
  4. Pour heavy cream over the chicken and sprinkle Parmesan cheese on top; stir gently.
  5. Cook on low for 6-7 hours or high for 3-4 hours.
  6. About 20 minutes before serving, cook pasta according to package instructions until al dente.
  7. Shred the chicken in the slow cooker using two forks and mix well before serving over pasta.
