  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 ripe peaches (diced)
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press into a 9-inch springform pan. Bake for 10 minutes until golden.
  2. In a mixing bowl, beat cream cheese until smooth. Add sour cream, sugar, vanilla extract, cornstarch, and lemon juice; mix until well combined.
  3. Fold in diced peaches and half of the mixed berries gently into the filling.
  4. Pour filling into the crust; bake for 45-50 minutes until edges are set but center jiggles slightly.
  5. Cool in the oven with door ajar for 1 hour; refrigerate for at least 4 hours or overnight.
  6. Top with remaining berries before serving.
