  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cups low-sodium chicken broth
  • 2 stalks fresh lemongrass, bruised
  • 1 tablespoon fresh ginger, grated
  • ½ cup fresh cilantro, chopped (for garnish)
  • 2 sliced chili peppers (adjust to taste)
  • Juice of 1 lime

Instructions

  1. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. In a large pot over medium heat, heat a splash of oil and sauté minced garlic and grated ginger until fragrant (about 1 minute).
  3. Add the chicken broth and bruised lemongrass; bring to a gentle simmer while stirring occasionally.
  4. Stir in the coconut milk and seasoned chicken pieces; cook until the chicken is tender (10-15 minutes).
  5. Add sliced chili peppers and any additional vegetables you like (such as mushrooms or bell peppers). Cook for another few minutes.
