  • 2 cups fresh mushrooms (cremini or shiitake), sliced
  • 1/2 cup dry white wine
  • 3 cups low-sodium vegetable broth (warmed)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 medium shallot, minced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Fresh parsley (for garnish)

Instructions

  1. Heat butter and olive oil in a large pan over medium heat until melted. Add minced shallots and garlic; sauté until translucent.
  2. Stir in sliced mushrooms and cook until they soften and release their juices (about 5 minutes).
  3. Add Arborio rice, stirring continuously for about 2 minutes until lightly toasted.
  4. Pour in white wine to deglaze the pan; stir until absorbed (around 2-3 minutes).
  5. Gradually add warm vegetable broth one ladle at a time, stirring frequently until most liquid is absorbed before adding more. Continue until rice is al dente (approximately 18-20 minutes).
  6. Remove from heat and stir in Parmesan cheese. Season with salt and pepper to taste.
  7. Plate the risotto and garnish with fresh parsley before serving.
