- 1 can (15 oz) creamed corn
- 1 box (8.5 oz) Jiffy corn muffin mix
- 1 cup sour cream (full-fat)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup unsalted butter, melted
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix the sweet corn, creamed corn, Jiffy muffin mix, sour cream, melted butter, half of the cheddar and Monterey Jack cheese, green onions, salt, and pepper until well combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle the remaining cheese on top.
- Bake for 45-50 minutes until golden brown and bubbly. Let cool for 10 minutes before serving.
