  • ¾ cup granulated sugar
  • ¼ cup lemon juice (freshly squeezed)

  • 1 cup cherries (pitted and chopped)

Instructions

  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press firmly into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream, lemon juice, lime juice, and vanilla. Blend until smooth.
  3. Add eggs one at a time on low speed; mix until just combined.
  4. Gently fold in chopped cherries and pistachios with a spatula.
  5. Pour filling over crust; bake for 50–60 minutes or until center is set but slightly jiggly.
  6. Turn off the oven, crack the door open, and cool for about an hour inside before refrigerating.
