Ingredients
- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- 16 oz full-fat cream cheese, softened
- 1 cup granulated sugar
- 1 cup full-fat sour cream
- ¼ cup freshly squeezed lemon juice (about 2 lemons)
- ¼ cup freshly squeezed lime juice (about 2 limes)
- 1 cup pitted cherries, chopped (fresh or frozen)
- 1/2 cup chopped pistachios, plus extra for garnish
- 1 tsp pure vanilla extract
- 2 tsp gelatin powder
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers and melted butter until combined. Press into the bottom of a springform pan.
- Bake the crust for about 10 minutes until golden brown. Allow to cool.
- While cooling, beat cream cheese in a large bowl until smooth. Gradually add sugar until fully blended.
- Mix in sour cream, lemon juice, lime juice, cherries, vanilla extract, and gelatin powder until smooth.
- Gently fold in half of the chopped pistachios.
- Pour filling over cooled crust and smooth the top with a spatula.
- Bake at 325°F (160°C) for 50-60 minutes until slightly jiggly in the center. Turn off the oven and let cool inside for an hour.
- Refrigerate for at least 4 hours or overnight before serving. Garnish with remaining cherries and pistachios before slicing.
