  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  2. In a bowl, mash the ripe bananas until smooth. Stir in melted butter or oil, eggs, and vanilla until well combined.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture without overmixing.
  4. Gently fold in coconut flakes and pineapple chunks until evenly distributed.
