  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; place them in the bottom of the baking dish.
  3. Evenly sprinkle uncooked rice over the chicken.
  4. In a bowl, mix chicken broth, cream of mushroom soup, onion powder, and garlic powder until smooth; pour this mixture over the rice and chicken.
  5. Add frozen mixed vegetables on top without thawing and sprinkle with cheddar cheese.
  6. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
  7. Allow to cool slightly before serving.
