- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper; place them in the bottom of the baking dish.
- Evenly sprinkle uncooked rice over the chicken.
- In a bowl, mix chicken broth, cream of mushroom soup, onion powder, and garlic powder until smooth; pour this mixture over the rice and chicken.
- Add frozen mixed vegetables on top without thawing and sprinkle with cheddar cheese.
- Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
- Allow to cool slightly before serving.
