  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, diced (about 1 cup)
  • 4 garlic cloves, minced
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
  • 2 cups low-sodium beef broth
  • Fresh cilantro for garnish

Instructions

  1. Trim excess fat from the chuck roast and season generously with salt and pepper.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides until browned (about 5 minutes).
