  • 1 cup cherry tomatoes (halved)
  • 1 medium red bell pepper (diced)
  • 1 cup corn (canned or frozen)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Juice of 1 lime
  • 2 tbsp olive oil

Instructions

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a large skillet over medium heat, add olive oil and sauté onions until translucent. Add minced garlic and stir until fragrant.
  3. Stir in rinsed quinoa, cumin, and chili powder; toast briefly.
  4. Pour in vegetable broth, then add black beans, corn, cherry tomatoes, and bell pepper. Combine thoroughly.
  5. Bring to a boil; reduce heat to low. Cover and simmer for 15–20 minutes until quinoa absorbs liquid.
  6. Fluff with a fork, squeeze lime juice over the top, and serve warm.
