Ingredients
- 1 whole turkey (12–14 lbs)
- 1 cup kosher salt
- 2 tsp freshly cracked black pepper
- 1/2 cup olive oil
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 4 sprigs fresh sage
- 1 halved lemon
- 2 garlic bulbs
- 2 carrots, chopped
- 2 onions, quartered
- 2 cups low-sodium chicken broth
Instructions
- Preheat oven to 325°F (163°C).
- Brine the turkey by mixing water and kosher salt in a large container; soak turkey for at least 12 hours.
- Pat turkey dry and rub with olive oil, seasoning generously with salt and pepper inside and out. Stuff with herb sprigs.
- Place lemon halves, garlic bulbs, carrots, and onions inside the cavity.
