- 1 cup bell peppers (mixed colors), sliced
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ medium red onion, thinly sliced
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley and mint, chopped
- Juice of 1 lemon
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Marinate the steak in olive oil, lemon juice, cumin, paprika, salt, and pepper for at least 15 minutes.
- Preheat grill or skillet over medium-high heat; cook marinated steak for about 4-5 minutes per side until medium-rare. Let it rest before slicing.
- While the steak rests, prepare veggies by combining bell peppers, cucumber, red onion, and cherry tomatoes in a bowl with salt and lemon juice.
- In bowls, layer cooked quinoa or rice as the base. Slice rested steak against the grain and place on top.
