  • 1 lb flank or sirloin steak
  • 3 tbsp extra virgin olive oil
  • 1 cup bell peppers (mixed colors), sliced
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley and mint, chopped
  • Juice of 1 lemon
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Marinate the steak in olive oil, lemon juice, cumin, paprika, salt, and pepper for at least 15 minutes.
  2. Preheat grill or skillet over medium-high heat; cook marinated steak for about 4-5 minutes per side until medium-rare. Let it rest before slicing.
  3. While the steak rests, prepare veggies by combining bell peppers, cucumber, red onion, and cherry tomatoes in a bowl with salt and lemon juice.
  4. In bowls, layer cooked quinoa or rice as the base. Slice rested steak against the grain and place on top.
  5. Add the veggie mix and top with crumbled feta cheese and freshly chopped herbs. Drizzle with olive oil.
