Instructions
- Preheat your oven to 400°F (200°C) and grease a baking sheet.
- In a bowl, mix fresh spinach, ricotta, and mozzarella until creamy.

- Roll out the puff pastry on a floured surface to about ¼ inch thick.
- Spread the spinach mixture evenly over the pastry, leaving a 1-inch border.
- Roll the pastry tightly from one end to the other.
- Slice into 1-inch pieces and place them cut-side up on the baking sheet.
- Brush each swirl with egg wash and bake for 20-25 minutes until golden.
