Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup unsalted vegan butter (chilled)
- 1 cup fresh blueberries
- 1/3 cup granulated sugar
- 1 tbsp lemon juice
- 1/2 tsp ground cinnamon
- 2 tbsp non-dairy milk (for brushing)
Instructions
- Prepare the Dough: In a bowl, combine flour and chilled vegan butter until crumbly. Gradually add cold water until it forms a smooth dough. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Make the Filling: Mix blueberries, sugar, lemon juice, and cinnamon in a separate bowl. Let sit while dough chills.
- Roll Out Dough: Divide chilled dough in half and roll each on a floured surface to about 1/8 inch thick. Cut out ghost shapes using a cookie cutter. Place half on a baking sheet lined with parchment paper.
- Add Filling & Seal: Spoon blueberry filling onto each ghost shape, avoiding overfilling. Top with another ghost cutout; crimp edges with a fork to seal and poke holes for steam to escape.
- Bake & Enjoy: Preheat oven to 375°F (190°C). Brush pies with non-dairy milk for a golden finish and bake for 20-25 minutes until lightly browned. Allow to cool slightly before serving.
