  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • ½ cup sour cream (full-fat)
  • 1 cup crushed pineapple (drained)
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs (room temperature)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, coconut flakes, and melted butter until combined. Press firmly into the bottom of an 8-inch square baking pan lined with parchment paper.
  2. Bake the crust for about 10 minutes or until golden brown.
  3. In another bowl, beat the cream cheese until smooth. Add sour cream, sugar, and vanilla; mix until combined. Fold in crushed pineapple gently.
  4. Beat in eggs one at a time until just incorporated.
  5. Pour the filling over the cooled crust and spread evenly. Bake for 25-30 minutes until edges are set but center slightly jiggles.
  6. Allow cooling at room temperature before chilling in the fridge for at least 4 hours or overnight.
