  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 pound pork sausage, sliced
  • 1 cup shredded duck confit (or chicken)
  • 4 cups low-sodium chicken broth
  • 1 tablespoon Herbes de Provence
  • 1/2 cup panko breadcrumbs

Instructions

  1. Rinse and soak the beans in cold water overnight.
  2. In a large Dutch oven, heat olive oil over medium heat. Sauté onions until translucent; add garlic and carrots, cooking until fragrant.
  3. Stir in sliced sausage and duck confit; sauté until browned.
  4. Add chicken broth, drained beans, and Herbes de Provence. Bring to a gentle boil, then reduce heat and simmer for about 1 hour, stirring occasionally.
  5. Transfer to an oven-safe dish or keep in the Dutch oven. Top with panko breadcrumbs mixed with olive oil.
  6. Preheat oven to 375°F (190°C) and bake uncovered for 30 minutes until golden brown.
