Ingredients

  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 1 medium zucchini, sliced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions for about 5 minutes until translucent.
  2. Add carrots, celery, and garlic; stir for another 3–4 minutes until slightly softened.
  3. Pour in the vegetable broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 10 minutes until potatoes are fork-tender.
  4. Stir in zucchini slices and coconut milk; cook for an additional 5 minutes until creamy.
  5. Add thyme and basil along with salt and pepper to taste. Simmer for another 5 minutes.
  6. Serve hot, garnished with extra herbs if desired.
