- 2 medium carrots, diced
- 2 stalks celery, chopped
- 2 medium Yukon Gold potatoes, diced
- 1 medium zucchini, sliced
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 4 cups low-sodium vegetable broth
- 1 cup full-fat coconut milk
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions for about 5 minutes until translucent.
- Add carrots, celery, and garlic; stir for another 3–4 minutes until slightly softened.
- Pour in the vegetable broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 10 minutes until potatoes are fork-tender.
- Stir in zucchini slices and coconut milk; cook for an additional 5 minutes until creamy.
- Add thyme and basil along with salt and pepper to taste. Simmer for another 5 minutes.
- Serve hot, garnished with extra herbs if desired.
