  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup powdered sugar
  • ¼ cup freshly squeezed lemon juice
  • 1 ½ cups fresh strawberries, chopped (divided)
  • 2 tbsp gelatin powder
  • 1 cup whipped cream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the crust by combining graham cracker crumbs with melted butter; press into the bottom of a springform pan.
  2. In a bowl, beat softened cream cheese until smooth. Gradually mix in sour cream and powdered sugar; then add lemon juice.
  3. Fold in half of the chopped strawberries into the cheese mixture.
  4. Dissolve gelatin in ¼ cup water over low heat; stir until fully dissolved and mix into the cheesecake filling.
  5. Pour the filling over the crust and chill in the refrigerator for at least four hours or overnight to set.
  6. Blend remaining strawberries with sugar if desired and spread over the chilled cheesecake before serving.
