  • 2 large eggs
  • 1 cup unsweetened applesauce
  • ⅓ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs and mix in applesauce, oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
  5. Fill each muffin cup about three-quarters full and sprinkle extra cinnamon on top if desired.
  6. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
