  • 3 cloves fresh garlic, minced
  • 2 tbsp fresh lime juice
  • 6 cups mixed greens (spinach or romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or canned)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream or Greek yogurt

Instructions

  1. Season chicken breasts with salt, pepper, and minced garlic.
  2. Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side until cooked through.
  3. In a bowl, whisk together lime juice, sour cream or yogurt, chopped cilantro, salt, and pepper to make the dressing.
  4. While chicken cools slightly, chop mixed greens and halve cherry tomatoes.
  5. In a large mixing bowl, combine mixed greens, cherry tomatoes, corn, black beans, diced avocado, and sliced chicken.
  6. Drizzle the dressing over the salad and toss gently to coat.
