  • 1/2 cup red onion, thinly sliced
  • 1/2 cup dried cranberries (75g)
  • 1/3 cup roasted sunflower seeds (45g)
  • 1/2 cup Greek yogurt (120g)
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse broccoli florets under cold water and cut them into bite-sized pieces.
  2. Soak the sliced red onion in cold water for 10 minutes to reduce its sharpness.
  3. In a bowl, mix Greek yogurt, apple cider vinegar, honey or maple syrup, salt, and pepper until smooth.
  4. In a large bowl, combine broccoli, drained onion, cranberries, and sunflower seeds.
  5. Pour the dressing over the salad and toss gently until evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
