  • 1 lb baby potatoes (about 500g)
  • 200g high-quality feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh thyme or rosemary, chopped
  • 4 garlic cloves, minced
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Wash the baby potatoes and halve any larger ones for even cooking.
  3. Toss the halved potatoes in a bowl with olive oil, minced garlic, salt, pepper, and herbs until well coated.
  4. Place the seasoned potatoes in the baking dish and nestle chunks of feta among them.
  5. Roast for 30-35 minutes until golden brown and crispy.
