  • 2 cups fresh celery, diced

  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté the chopped onion and minced garlic until fragrant (about 5 minutes).
  2. Stir in the diced celery and carrots; cook until softened (around 4-5 minutes).
  3. Add rinsed lentils along with thyme, salt, and pepper; mix well.
  4. Pour in the vegetable broth and bring to a gentle boil. Reduce heat to low and simmer for about 30-35 minutes or until lentils are tender.
  5. For a creamier texture, blend part of the soup using an immersion blender or transfer half to a regular blender before mixing back in.
