  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup frozen mixed vegetables (peas and carrots)
  • ½ tsp ground black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper.
  3. In a large bowl, mix uncooked rice, chicken broth, cream of mushroom soup, onion powder, garlic powder, frozen vegetables, and pepper until well combined.
  4. Place the seasoned chicken on top of the rice mixture in the baking dish. Cover tightly with aluminum foil.
  5. Bake for 1 hour or until the chicken reaches an internal temperature of 165°F (75°C) and the rice has absorbed all the liquid. Remove foil in the last 10 minutes for a golden crust.
