  • 2 large lemons (zest and juice)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a bowl, mix melted butter and 1/4 cup sugar until smooth. Add flour and press into the bottom of the prepared dish.
  3. Bake the crust for 15 minutes or until lightly golden.
  4. In another bowl, whisk together eggs, remaining sugar, lemon juice, lemon zest, flour, and baking powder until smooth.
  5. Gently fold in raspberries. Pour the filling over the baked crust.
  6. Bake for an additional 20-25 minutes until set but slightly jiggly in the center. Cool completely before slicing.
