- 1 ripe avocado
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- 1 tsp garlic powder
- 2 tbsp olive oil (plus extra for cooking)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Chop sweet potatoes into even cubes.
- In a mixing bowl, combine olive oil, garlic powder, salt, and pepper. Toss chicken breasts until well coated.
- Spread sweet potato cubes on a baking sheet lined with parchment paper. Roast for 25-30 minutes until tender.
- While the sweet potatoes roast, heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes on each side until golden brown and cooked through.
