  • 1 pound medium shrimp, peeled and deveined
  • 1 cup brown rice
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 ripe avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Rinse the brown rice under cold water until clear. In a saucepan, combine rice with 2 cups of water. Bring to a boil, cover, and simmer on low for about 45 minutes.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Season shrimp with cumin, chili powder, salt, and pepper; sauté for about 3–4 minutes until pink and opaque.
  3. Add sliced bell peppers to the skillet during the last minute of cooking.
  4. In serving bowls, layer cooked rice at the bottom, top with sautéed shrimp and bell peppers.
  5. Finish with avocado slices and a squeeze of fresh lime juice. Garnish with chopped cilantro before serving.
