  • 12 jumbo pasta shells
  • 2 cups fresh spinach (wilted)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic (minced)
  • 2 cups marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cook the pasta shells in salted water until al dente (8-10 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute, then add spinach until wilted. Remove from heat.
  3. In a bowl, combine ricotta, sautéed spinach, mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper. Mix until well blended.
  4. Stuff each shell with the mixture and place them in a greased baking dish. Pour marinara sauce over the shells.
  5. Cover with foil and bake for 25 minutes. Uncover and bake an additional 10-15 minutes until bubbly and golden.
