Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 Earl Grey tea bags
  • 2 tsp unflavored gelatin powder (about 1 packet)
  • 1 tsp vanilla extract
  • 2 tbsp cold water

Instructions

  1. In a saucepan, heat heavy cream, whole milk, and sugar over medium heat until steaming but not boiling. Stir until sugar dissolves.
  2. Remove from heat and steep Earl Grey tea bags for 10 minutes.
  3. In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes.
  4. Remove tea bags from the cream mixture and stir in bloomed gelatin until fully dissolved; add vanilla extract.
  5. Pour into individual molds or glasses and refrigerate for at least 4 hours or overnight.
  6. To serve, dip molds briefly in warm water before unmolding onto plates.
