  • 1 cup red bell pepper, diced
  • 3 green onions, sliced
  • ½ cup sunflower seeds, toasted

  • ¼ cup extra virgin olive oil
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Sriracha sauce (adjust to taste)

Instructions

  1. Wash and cut broccoli into bite-sized florets. Dice red bell pepper and slice green onions.
  2. In a skillet over medium heat, toast sunflower seeds for 3-5 minutes until golden brown.
  3. Whisk together olive oil, soy sauce, rice vinegar, honey or maple syrup, and Sriracha in a bowl.
  4. In a large bowl, combine broccoli, red bell pepper, green onions, cranberries, and sunflower seeds. Drizzle with dressing and toss gently to coat.
  5. Chill in the fridge for at least 15-30 minutes before serving to let the flavors meld.
