  • 1 red bell pepper, sliced
  • ¼ cup chopped cilantro
  • ¼ cup creamy peanut butter
  • 2 tbsp rice vinegar
  • 1 tbsp honey (or maple syrup)
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tsp chili sauce (optional)

Instructions

  1. Wash and cut broccoli into bite-sized florets.
  2. Peel and slice carrots into matchsticks. Slice the red bell pepper into strips.
  3. In a bowl, whisk together peanut butter, rice vinegar, honey or maple syrup, soy sauce, sesame oil, and optional chili sauce until smooth.
  4. In a serving bowl, combine the broccoli, carrots, bell pepper, and cilantro. Drizzle the dressing over the top.
  5. Gently toss until evenly coated. For enhanced flavor, refrigerate for 30 minutes before serving.
