  • ½ cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix melted butter and brown sugar until smooth. Add eggs one at a time, followed by pumpkin puree and vanilla extract.
  4. Gently fold the dry ingredients into the wet mixture until just combined. If using, fold in nuts.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes until golden brown and a toothpick comes out with moist crumbs.
  6. Allow to cool before cutting into squares.
