  • 1 ½ cups all-purpose flour

  • ½ cup brown sugar (light)
  • ⅓ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil (or applesauce)
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture using a clean towel.
  3. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  4. In another bowl, mix eggs, granulated sugar, brown sugar, oil (or applesauce), and vanilla until smooth.
  5. Fold in the grated zucchini and chocolate chips into the wet mixture until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 50–60 minutes or until a toothpick comes out clean.
  7. Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
