  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1.5 lbs baby potatoes, halved
  • 1 large onion, sliced
  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tsp dried thyme or rosemary
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 3-4 minutes on each side until golden brown.
  2. While the chicken cooks, chop baby potatoes in half and slice the onion into thin wedges. Mince the garlic.
