  • Salt & pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and scrub the baby potatoes, then pat dry.
  3. Cut each potato in half and place them in a bowl. Drizzle with olive oil and season generously with salt and pepper.
  4. In a small saucepan over low heat, melt the butter with minced garlic for about 3-4 minutes until fragrant.
  5. Pour the garlic butter over the seasoned potatoes and toss to coat evenly.
  6. Spread the potatoes on a lined baking sheet and roast for 25-30 minutes, flipping halfway through until golden brown.
