- 1/2 cup fresh parsley, chopped
- 3 garlic cloves, minced
- 1/2 cup feta cheese, crumbled
- Zest of 1 lemon
- 1 cup orzo pasta
- 2 tbsp olive oil (plus extra for drizzling)
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground chicken, parsley, minced garlic, feta cheese, lemon zest, oregano, salt, and pepper. Mix gently until just combined.
- Shape the mixture into small meatballs (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
- Bake meatballs for 20-25 minutes until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
- While baking, cook orzo according to package instructions in salted water. Drain and return to pot; stir in olive oil and lemon juice.
- Gently fold baked meatballs into the pot with orzo.
