  • 1 cup couscous
  • 1 1/4 cups water
  • 1 medium cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tbsp lemon juice (fresh)
  • 2 tbsp extra virgin olive oil
  • Additional salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground chicken, harissa paste, minced garlic, salt, and pepper until just combined.
  3. Form small meatballs (about 1 inch) using wet hands and place on a lined baking sheet.
  4. Bake meatballs for about 20 minutes until golden brown and internal temperature reaches 165°F (75°C).
  5. In a saucepan, bring water to a boil; stir in couscous and a pinch of salt. Cover and let sit for about 5 minutes until fluffy.
  6. Prepare the cucumber herb salad by mixing diced cucumber with chopped parsley and mint; drizzle with olive oil and lemon juice, then season with salt.
  7. Serve warm harissa chicken meatballs over couscous topped with cucumber herb salad.
