  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup fresh lemon juice (about 45 lemons)
  • 2 tbsp lemon zest
  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter until crumbly. Press into the bottom of a pie dish.
  2. In another bowl, whisk together sugar, eggs, fresh lemon juice, and lemon zest until smooth. Pour filling into the prepared crust.
  3. Bake for 25-30 minutes until edges are firm but center is slightly jiggly. Let cool at room temperature then refrigerate for at least 4 hours.
  4. Whip heavy cream with powdered sugar until soft peaks form. Spread over chilled pie before serving.
