  • 3 tbsp white miso paste
  • 2 tbsp olive oil
  • 1 tbsp pure maple syrup
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp toasted sesame seeds
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together miso paste, olive oil, maple syrup, soy sauce, rice vinegar, minced garlic, and grated ginger until smooth.
  3. In a large mixing bowl, toss sweet potato cubes with half of the miso glaze until evenly coated.
  4. Spread the coated sweet potatoes on a parchment-lined baking sheet. Bake for 25-30 minutes or until tender and caramelized.
  5. Drizzle remaining glaze over baked sweet potatoes, then top with toasted sesame seeds and chopped green onions before serving.
