  • 4 skin-on salmon fillets (6 oz each)
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh dill or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the orzo salad: Boil salted water in a pot, add orzo, and cook until al dente. Drain and rinse under cold water.
  2. Chop cherry tomatoes, cucumber, and red onion. In a bowl, combine with fresh herbs.
