- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 lb baby potatoes, halved
- 1/3 cup balsamic vinegar
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1 tsp fresh thyme or rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper.
- Place chicken breasts in a large bowl and pour half of the marinade over them. Marinate for at least 30 minutes.
- While marinating, wash and halve baby potatoes. Drizzle with olive oil and sprinkle with salt and herbs; toss to coat.
- Line a baking sheet with parchment paper and arrange marinated chicken in the center with potatoes around them.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
