  • 1 red bell pepper, diced
  • 1 medium onion, diced

  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 cups low-sodium chicken broth
  • 1 (15 oz) can black beans, rinsed and drained
  • Juice of 1 lime

Instructions

  1. Dice onion and red bell pepper into bite-sized pieces. Mince garlic cloves.
  2. Layer chicken breasts at the bottom of the slow cooker. Add diced onion, bell pepper, minced garlic, black beans, and pineapple chunks with juice.
  3. Sprinkle chili powder and cumin over the top.
  4. Pour low-sodium chicken broth over all ingredients to ensure they are slightly submerged.
