  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries (chopped)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a jelly roll pan with parchment paper and lightly spray with nonstick cooking spray.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, beat eggs and sugar until thick and pale. Gently fold in the dry ingredients until just combined.
  4. Spread batter evenly in the prepared pan and bake for 12-15 minutes or until golden brown. Let cool slightly.
  5. For the filling, blend cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream until soft peaks form; fold into the cream cheese mixture along with chopped strawberries.
  6. Invert the cooled cake onto a powdered sugar-dusted kitchen towel, remove parchment paper, spread cheesecake filling evenly over the cake, then roll tightly from one end.
  7. Chill for an hour before slicing into rounds. Serve chilled.
