- 8 oz spaghetti (or pasta of choice)
- 3 cloves fresh garlic, minced
- 2 tbsp lemon juice (freshly squeezed)
- 3 tbsp extra virgin olive oil
- 1/2 cup Parmesan cheese (freshly grated)
- Salt & pepper to taste
Instructions
- In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a blender, combine avocados, garlic, lemon juice, olive oil, Parmesan cheese, salt, and pepper. Blend until smooth.
- If the sauce is too thick, gradually add reserved pasta water while blending until desired creaminess is achieved.
- In a large bowl, toss drained pasta with the avocado sauce until well-coated.
- Taste and adjust seasoning as needed. Garnish with extra Parmesan and red pepper flakes if desired.
