Ingredients

  • 2 ripe avocados
  • 8 oz spaghetti (or pasta of choice)
  • 3 cloves fresh garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • 1/2 cup Parmesan cheese (freshly grated)
  • Salt & pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a blender, combine avocados, garlic, lemon juice, olive oil, Parmesan cheese, salt, and pepper. Blend until smooth.
  3. If the sauce is too thick, gradually add reserved pasta water while blending until desired creaminess is achieved.
  4. In a large bowl, toss drained pasta with the avocado sauce until well-coated.
  5. Taste and adjust seasoning as needed. Garnish with extra Parmesan and red pepper flakes if desired.
